It’s summer and there’s nothing better in summer than homemade ice cream. Years ago, before kids, we used to visit my great aunt and uncle in July and would spend our evenings making ice cream. Fresh berries or peaches, heavy cream, real sugar – it was ah-mazing.
These days, there’s a lot less of those trips and very little ice cream is being made. But that doesn’t mean we don’t think about it a lot. Those carefree days of summer before kids and way too many responsibilities? Um, yeah. Sometimes I miss all that.
But my kids are awesome so I guess it’s an even trade, right?
ANYWAY, just because it’s not the old days doesn’t mean we aren’t still totally up for ice cream in the summer (or any time really). Homemade it is still my favorite variety – even if it’s the cheater kind that involves little more than blending up some frozen bananas and refreezing them. And lately I’ve found a whole ton of paleo ice cream sandwich recipes out there that I’d like to try.
