Menu Plan Monday: Paleo Style

We’ve been trying really hard to stick with our food/grocery budget the last few months. We’re still going a teeny bit over, but it’s definitely getting better even with the addition of all the “paleo foods”. I didn’t believe it, but it really does seem to have been the processed foods that were jacking up our grocery bills all this time.

That’s not to say that we never buy anything processed, but we’re making an effort to keep it at a minimum. I sometimes feel guilty for continuing to feed the kids things I am not eating myself, but I also know it will need to be a slower transition for them. I wouldn’t dream of making them quit Goldfish crackers cold turkey.

We are making a point this week to have more fruit and veggie snacks available for them. They LOVE string cheese and seem to tolerate dairy just fine so we’ll leave that in. I’ve been trying to just give them some of what I eat for most meals and they seem to like it. The other day I was having some sliced Braunschweiger at lunch and they asked to try it – both loved it!

The meal plan for this week is fairly complete – we don’t intend to eat out at all although we all know that is subject to change at a moment’s notice. In addition to what’s listed below, I’m planning to try my hand at raw sauerkraut {won’t be ready to eat for a couple of weeks} and homemade mayo.

Breakfasts – Eggs with protein (bacon or seasoned ground meat) and sauerkraut or fruit

Lunches – Leftovers or antipasto salad in a jar

Dinners – Marinated Skirt Steak and Sal’s Veggie Stir Fry, Chicken Tortilla-less Soup, Beef Pork & Bacon Meatloaf with Mashed Faux-tatoes

    I think my biggest issue is that I haven’t eaten actual eggs since I was pregnant 6+ years ago! I started eating processed eggs/egg whites recently, but I’m sure that most of those have gluten in them … so I’m going to give it a go with some recipes this week. And finally cook some quinoa!!

      I generally use whole eggs, but when I want just whites I separate my own. It’s just easier that way and cleaner.

      When I was eating grains, quinoa was a favorite. I especially like it as an oatmeal substitute with coconut milk, bananas, and macadamia nuts.

    3) mashed faux-tatoes are the bomb. seriously.
