It’s hard to get excited about any one time of year here in the land of no seasons. The leaves don’t change color much, the weather stays virtually the same, it’s kind of boring here in California. But just knowing that it is October – not to mention the nasty cold I’m currently battling – is enough to put me in the mood for soup.
I think I’ve mentioned before that my cooking skills are at their very best when it comes to one pot meals. The whole timing a meal thing just doesn’t come naturally to me so I try to skip it whenever possible. That’s why soup is right up my alley – all the things in a pot and walk away for hours. I’m good at that.
Making soup becomes a bit more challenging when you’re eating paleo, though. You gotta get creative with your paleo soup since you skip the traditional soup fillers like grains and legumes . I generally just add more protein, but as you’ll see in some of the recipes linked below, there are other ways to bulk up your paleo soup, too.
This week, I made a slow cooker full of Danielle Walker’s chicken tortilla soup from her cookbook. It was seriously amazing. I never would have thought to add sweet potato chunks to my TORTILLA soup but it was filling and worked like a charm.
