Last week, I did a roundup of slow cooker breakfast recipes and talked a little about how crazy busy it gets around here in the morning. I’m not really sure how Sal is able to get the boys up, dressed, fed and out the door each morning but he does. I’d lose my mind.
In addition to the hot breakfast ideas I posted about last week, I always thinks it’s nice to have some more “grab and go” type options. Luke loves drinkable yogurt, squeezy fruit pouches and dry cereal. Joey will eat non-breakfast foods for breakfast more often than not. If he eats at all.
One idea I’ve seen a lot lately are breakfast cookies. Most recipes are fruit and nut based which works great for my boys since they have no allergies. A lot of recipes are gluten free (which is awesome) and many are vegan (if you’re into that kind of thing).
For my first attempt at a breakfast cookie recipe, I decided on this one from Sally’s Baking Addiction. Had I looked at the recipe a little more closely, I probably wouldn’t have chosen it because I’d have preferred something with eggs in it but once I got started, I figured I might as well see it through.
I tend to change up recipes a little more than I did this one. The only real adjustment I made was using 1/2 cup peanut butter in place of 1/2 cup of the almond butter which I only did because I ran out of almond butter. I probably would do this in the future for a couple of reasons. One, I don’t like peanut butter and it’s SO strong and two, Joey can’t have peanuts at school.
My oven tends to run a little on the cool side so they took longer to cook than the recipe indicates they should. In hindsight, I should probably have cranked it up another 25 degrees. All of that may be a non-issue for you, but just wanted to mention it because the recipe talks about how it’s important not to overcook them.

I’m intrigued. And I think the “cookie” label would make my kiddos want one, eat it without fuss, and then ask for seconds. When it comes to a quickie breakfast, that’s invaluable.
