2 Minute Mango Salsa & Shrimp

I always have big ideas when it comes to planning for the big game. I always want us to host a big party full with family, friends and tons of delicious snacks. But, as with most things, we never quite seem to be ahead of the curve on that and instead end up being guests at someone else’s party. But that’s okay, too.

The down side of being at someone else’s house is that you don’t get a whole lot of say over what’s being served. So while I’m usually more than willing to make some diet exceptions in honor of the big game, things can (and do!) tend to go downhill quickly. It’s for this reason that I TRY to bring a diet-friendly snack when attending parties where there might not otherwise be any.

This year, we decided to try a new twist on an old favorite. We are making a two minute mango salsa to be served shrimp cocktail style. You could also add some fresh veggies into the mix here but we tend to love the shrimp so much that there’s no time (or room) for veggies.

What is mango salsa, you ask? Well, it’s SO SIMPLE. Let me tell you.

1. Make a trip to your local Walmart (or other favorite, local store – that’s just where we happened to shop this time).

2. Pick up 1 can of Del Monte Diced Mangos and 1 jar of your favorite salsa. We like Pace Mild Original Picante.

3. Open and drain the mangos. I also rinse mine in a colander to get the syrup off. Put them on a paper towel to dry a bit if you do this.

4. Add mangos and salsa to a bowl. Stir in chopped cilantro.

5. Serve with precooked shrimp and veggie sticks.

If you’re not 100% sold on this idea, select Walmart stores will be holding tasting events January 22-25 so you can try it for yourself. Check with your local store for details.

ALSO, in addition to bringing this sure-to-be-a-hit dish to your friends’ big game party, consider picking up the “Book of Life” DVD (available at Walmart on January 27) for the littles who may not be big football fans to watch. My kids have seen this movie a couple of times and they LOVE IT so we will definitely be added it to our collection.
