Baked Faux Potato Soup

Let me start this off by saying that there is absolutely nothing wrong with potatoes. There are probably a plethora of vitamins and minerals in them that we all need. The downside to them (for me) is the high carb content – they are a trigger food for me and best avoided unless totally worth it.

Potato soup without the potatoes?

I found myself craving potato soup a couple of weeks ago. Since I am a huge fan of mashed cauliflower in place of mashed potatoes, I wondered about maybe changing up a favorite potato soup recipe by subbing cauliflower. And you know what? It totally worked.

I’m not going to lie to you and say this tasted just like my favorite potato soup at Claim Jumper because it definitely does not. It kinda doesn’t matter, though, because what it does taste like is cheesy, bacony deliciousness and you really can’t go wrong with that, can you?

Please forgive the slightly pink color of my pretend potato soup – I think I got a little excited with the Frank’s Red Hot. It was delicious that way, but definitely spicy. Rather than topping with grated cheddar, I used my left over cheese to make cheese crackers in the oven. They are super pretty and the kids thought they were fun, too.

You’ll probably be seeing a lot of soup from me over the next couple of months. It’s all I can think about right now and so ridiculously easy to make – especially in the crock pot. Cook once and eat for a week? Yes, please.
