Like every other day around here, we try to keep the 4th of July pretty low key. This means food you can make in advance so that as much time as possible can be spent in the pool and hanging with family/friends.
One really great way to do this is by marinating meats. In this case we found some awesome short ribs at Sam’s Club and decided to put a spin on the Pioneer Woman firecracker shrimp recipe we love. And they were FANTASTIC. It really doesn’t get better than a quick + easy marinade and 5 minutes on the grill.
Because the ribs are kinda spicy, we thought it made sense to have a side dish that’s a little more on the mild side. A no-potato potato salad seemed to fit the bill perfectly. This salad can be served warm or cold, just depends on whether you want to make it in advance and refrigerate or throw it together at the last minute. Either way, this is another crazy quick and easy dish. Love.
