One of the very first things I learned about my husband is that he loves Dr Pepper. LOVES. For that reason, I knew that he’d jump at the chance to create an amazing dish featuring his very favorite beverage. And since we were making our weekly Walmart run, we picked up a 12-pack each of regular and diet Dr Pepper.
Since we are totally obsessed with Korean short ribs right now, that was the obvious choice for the base of this meal. We paired the sweet and spicy marinated meat with sweet potatoes topped with Dr Pepper butter and it was heavenly. Even the boys, who don’t normally like anything spicy, couldn’t get enough.
We started with a huge pile of short ribs, canned chipotles in adobo, sliced onion, peeled garlic and Dr Pepper.
Everything went into a Pyrex dish and was allowed to marinade for a few hours before hitting the grill for 5 minutes per side.
While Sal handled the grill, I set the outdoor table with brown corduroy runners and red napkins. I also made some soda can lanterns using the empty Dr Pepper cans.
The finished short ribs were seriously delicious. A little sweet, a little spicy and melt-in-your-mouth tender.
Did I mention there’s Dr Pepper butter on that sweet potato? Yeah, that’s about as delicious as it sounds. Real, salted butter blended together with the sweet soda – better than brown sugar on a sweet potato any day.
- 3 lbs Korean short ribs
- 1 small can chipotles in adobo
- 1 onion, sliced
- 1 head garlic, peeled
- 2 cans Dr Pepper
- Add all ingredients to dish and let marinate 3-5 hours.
- Grill short ribs 5-8 minutes per side.
- Add onions and garlic from marinade (along with as many chipotles as you can handle) to sauce pan and saute.
- Serve with baked sweet potatoes topped with Dr Pepper butter.
- 1 stick butter, slightly softened
- 2-4 tbsp Dr Pepper
- Put butter in food processor.
- Stream in Dr. Pepper slowly as you pulse butter.
- Place butter mixture on wax paper.
- Refrigerate at least one hour.

holy moly that butter on a sweet potato sounds delicious. (and healthy-ish??) Also, I’ve never attempted short ribs… this looks easy. I want to try both of these!
