Somehow it’s the end of another month. Already. That means it’s time to share my monthly Pinterest Adventure – a link-up started by my friends Anna, Wendy, Megan and I. The goal is to put one (or more!) Pinterest pin into action over the course of a month and then write about it. Fun, right? This month’s project was Beef Enchilada Casserole – check out the recipe below!
With the holidays coming and changing jobs (more on that later), I don’t have all the time I wish I had to get crafty. I had HUGE plans to make the house a fall masterpiece this month and none of them came to fruition. There’s always next year, I suppose.
The one thing I am forced to make time for regularly, though, is cooking dinner. Quick and easy tends to be the rule of thumb for that. And a recipe gets bonus points if it makes enough for leftovers. I pinned this recipe for a Beef Taco Bake from Thirty Handmade Days a while ago but it got kind of lost in the shuffle until this past week.
This dish probably would have been perfectly delicious as is, but something about the recipe made me think of my Grandma’s enchiladas and then I needed those instead. A few small tweaks and a new favorite recipe was born – Beef Enchilada Casserole. And you know how I said I like quick? Well this is nothing if not quick – start cooking to stuffing my face was less than an hour. It doesn’t get much better than that.
