Favorite Things Friday – Paleo Recipes

My hubby and I are gearing up for a month of clean, paleo eating. He’s new to this and, I think, feeling a bit overwhelmed by all the “rules”. I’ve been trying to think of delicious eats we can keep in the house to make this as easy as possible.

Whenever I do something like this, I try to be as prepared as possible. I have a set of paleo recipes that I tend rely heavily on because it’s just easier (especially in those early withdrawal days) to keep it nice and simple.

Here are some of my favorite paleo recipes – things that will be in heavy rotation over the next 30 days.

I have to admit that I wrinkled my nose at these Buffalo Chicken Egg Muffins from Balanced Bites the first time I saw it. I mean eggs and chicken are just . . . odd to me. But these egg muffins are seriously DELISH. If you love buffalo everything as much as I do, you will not regret making these. Not even for a second.

I cannot say enough good things about this Cracklin’ Chicken from Nom Nom Paleo. Not only is it totally easy but my kids LOVE it. Like, I have to make an obscene amount of this if I want to have leftovers. It’s THAT good.

There are some people who say you shouldn’t recreate treats using paleo ingredients, but I think it’s fine sometimes especially when it’s something like this Banana Bread from Civilized Caveman. Not only is this delicious but it’s also SUPER filling and totally quick to make. That’s a lot of winning.

There aren’t many things I love as much as Italian sausage and this Sausage Spaghetti Squash Bake from PaleOMG definitely doesn’t disappoint. This is a dish I love to eat any time of year and it reheats amazingly well.

Baba-Ghanoush

I’ll be totally honest about this one – I haven’t actually tried this particular recipe for Eggplant Dip from Burn This Mama Down but I’m positive it’s going to be awesome because most everything my buddy Christina cooks is. This will make a great snack for those long afternoons at work when all I can think about is donuts.
