Back to school, and other big changes in life, are really hitting us hard this year. We get home, eat dinner, do the bedtime thing and that’s about it. For that reason, we need all the quick dinner ideas we can possibly get.
One of my husband’s go to lunch recipes is a perfect solution on those days that I need to throw something together quick for dinner. A delicious combo of tuna, farro and veggies – this dish is a crowd pleaser. Even my boys think it’s pretty darn delish.
Another great way we save time with this dish is the Bumble Bee® Premium Albacore Tuna in pouches. It also comes in cans, but it’s so awesome to not have to open and drain them – great way for the kids to jump in and help.
The kids love, love, love tuna sandwiches but this salad is a nice change from that. I love that they eat so many kinds of seafood and want to encourage that whenever possible. Plus, the veggies that go into this dish aren’t super offensive which means they don’t turn their noses up at it.
What you need –
1 pound farro, cooked to package instructions
4 pouches or 2 cans tuna
1 can white beans, drained
1 cup pickled mushrooms, sliced
1 cup grape tomatoes, cut in half
1/4 red onion, thinly sliced
1 tbsp chopped parsley
2 oz olive oil
1 tbsp red wine vinegar
salt, pepper and oregano
What you do –
Toss all ingredients together in large bowl.
Dress to taste with vinegar, oil, salt, pepper and oregano.
Serve cold or warm.
