When I went paleo, one of the biggest lessons that I learned is that gluten isn’t my friend. So even when I’m being a bad caveperson, I live mostly . I’ve found that it gets easier and easier over time but it was definitely a challenge at first.
One of the biggest secrets of gluten-free living is avoiding processed food. Gluten is hiding absolutely everywhere so you’ve gotta be careful – even when buying things that should be naturally gluten-free.
When the fam and I were shopping at Sam’s Club last week, we happened upon an in store demo of Tyson Gluten-Free grilled chicken. Sal said to me, “Does chicken even have gluten?” No. It shouldn’t but often does when frozen/packaged. Blech.
Because I’m always looking for a way to speed up dinner prep, the precooked chicken breasts were super appealing and chicken is always versatile. I was thinking tacos or something like that but my husband surprised me with a delicious idea. What do you get when you mix precooked chicken breast, mushrooms, Marsala wine and cream? Deliciousness. Toss that with some zucchini noodles and wow!
Speaking of zucchini noodles, have y’all tried these before? I bought a
a couple months ago specifically to make them and it was seriously such a good investment – especially if you are paleo or gluten-free. None of the processed nastiness of gluten-free noodles, all the fun of pasta.
So how, you ask, does one make this yummy, yummy dish? Let me tell you. It’s SO stinkin’ easy that you’ll want to add it to your meal planning rotation.
